## Ingredients
- 1 pound (450g) carrots, peeled and cut into sticks or rounds
- 1 cup (240ml) white vinegar or apple cider vinegar
- 1 cup (240ml) water
- 2 tablespoons granulated sugar
- 1 tablespoon kosher salt (or 2 teaspoons table salt)
- 2 cloves garlic, peeled and lightly crushed
- 1 teaspoon whole black peppercorns
- 1 teaspoon mustard seeds (optional)
- 1/2 teaspoon red pepper flakes (optional, for a spicy kick)
- Fresh dill sprigs or coriander seeds (optional, for added flavor)
## Directions
1. **Prepare the Carrots:**
- Wash and peel the carrots.
- Cut them into sticks, rounds, or diagonal slices, according to your preference.
- Pack the carrots tightly into a clean, sterilized glass jar.
2. **Make the Brine:**
- In a medium saucepan, combine the vinegar, water, sugar, and salt.
- Add the garlic cloves, black peppercorns, mustard seeds, and red pepper flakes if using.
- Bring the mixture to a boil over medium-high heat, stirring until the sugar and salt dissolve.
3. **Add Flavorings:**
- Place any optional fresh dill sprigs or coriander seeds into the jar with the carrots.
4. **Pour the Brine:**
- Carefully pour the hot brine over the carrots in the jar, ensuring they are fully submerged.
- Leave about 1/2 inch (1 cm) of space at the top of the jar.
5. **Seal and Cool:**
- Wipe the rim of the jar clean and seal tightly with the lid.
- Allow the jar to cool to room temperature on the counter.
6. **Refrigerate:**
- Once cooled, place the jar in the refrigerator.
- Let the carrots pickle for at least 24 hours before serving to develop the flavors.

- **Adjust Sweetness and Acidity:** Feel free to adjust the amount of sugar to make the pickles sweeter or tarter according to your taste.
