# [[Greek Lemon Rice]]

## Ingredients
- 1 cup (185 g) long grain white rice, rinsed
- 2 tablespoons (28 g) butter
- 2 cups (480 ml) chicken broth
- ¼–⅓ cup (60–80 ml) fresh squeezed lemon juice, to taste
- 1 teaspoon (6 g) salt
- 1 teaspoon (3 g) ground turmeric
- 1 tablespoon (15 g) finely chopped fresh herbs (optional; dill is recommended)
## Instructions
1. In a large skillet over medium–high heat, melt the butter.
2. Stir in the rinsed rice and cook for 1 minute, then add the turmeric and stir to coat.
3. Pour in the chicken broth, lemon juice, and salt; bring to a boil.
4. Reduce heat to a high simmer, cover, and cook for 20–25 minutes, stirring once or twice, until the rice is tender and liquid is absorbed.
5. Fluff the rice with a fork, stir in fresh herbs if desired, and serve immediately.
#### Notes
- Rinsing the rice removes excess starch and helps achieve fluffier grains.
- Adjust lemon juice amount to your taste preference.
