# [[Creamy Broccoli Soup - Dairy Free]] **Prep Time:** **10 minutes** **Cook Time:** **10–15 minutes** **Yield:** 6 servings ## Ingredients - 1 Tbsp (15 ml) vegan butter, margarine, or neutral oil (omit and use water/broth for oil-free) - 1 yellow onion, chopped (≈150 g) - 3 cloves garlic, minced - 12 cups (≈1,080 g) broccoli florets (about 2 large heads) - 6 cups (1,440 ml) low-sodium vegetable broth - 1 avocado, flesh only (peel & pit removed) — about 150 g - Salt & pepper, to taste #### Optional garnishes - Sliced avocado, hot sauce, crackers/croutons, chopped chives or green onion ## Instructions 1. In a large pot, melt the vegan butter (or heat oil) over medium heat. Add the chopped onion and garlic and sauté until softened, about **5 minutes**. 2. Add the broccoli and vegetable broth. Bring to a boil, then reduce heat to medium-low, cover, and cook until the broccoli is fork tender, about **5–7 minutes**. 3. Remove the pot from the heat and add the avocado. Use an immersion blender (or carefully transfer to a blender in batches) to puree the soup until smooth. Taste and adjust salt and pepper as needed. 4. Serve hot with desired garnishes. #### Notes - If you don’t have an immersion blender, cool slightly and blend in batches—do **not** overfill the blender.
