# [[Arby's Sauce]]

## Ingredients
- Ketchup – 240 g (1 cup)
- Apple cider vinegar – 30 g (2 tbsp)
- Brown sugar – 25 g (2 tbsp)
- Worcestershire sauce – 10 g (2 tsp)
- Soy sauce – 10 g (2 tsp)
- Onion powder – 1.5 g (½ tsp)
- Garlic powder – 1 g (¼ tsp)
- Paprika – 1 g (½ tsp)
- Black pepper – 0.5 g (¼ tsp)
- **MSG** – 1 g (¼ tsp) 👀
- Water – 30–60 g (2–4 tbsp), to thin
## Instructions
1. Combine all ingredients in a saucepan.
2. Simmer gently over ==95–100°C / 200–212°F== for **10 minutes**, stirring.
3. Adjust thickness with water.
4. Cool completely before serving.
#### Notes
- Flavor improves dramatically after **24 hours** refrigerated.
- This is *not* BBQ sauce — vinegar-forward and lightly savory is correct.
- If it tastes too sweet, add **½ tsp more vinegar**, not salt.
